Vindaloo Chicken Recipe

Ingredients:
– 500 grams chicken, cut into pieces
– 2 onions, finely chopped
– 4 garlic cloves, minced
– 1-inch ginger, grated
– 2 tablespoons vegetable oil
– 2 tablespoons vinegar
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– Salt to taste
– Fresh cilantro leaves for garnish
Cooking Instructions:
1. In a large bowl, combine the chicken pieces with vinegar, ginger, garlic, and salt. Mix well and marinate for at least 30 minutes or overnight for a more intense flavor.
2. Heat oil in a pan over medium heat. Add the onions and sauté until they turn golden brown.
3. Add cumin powder, coriander powder, turmeric powder, and red chili powder to the pan. Stir well to coat the onions with the spices.
4. Add the marinated chicken to the pan and cook until it turns brown on all sides. Stir occasionally to ensure even cooking.
5. Reduce the heat to low and cover the pan. Let the chicken simmer for about 20-25 minutes or until it is cooked through and tender.
6. Sprinkle garam masala over the chicken and mix well. Cook for an additional 2-3 minutes.
7. Garnish with fresh cilantro leaves before serving.
