Sugar Cookies Pumpkin Recipes
Ingredients:
– 2 ¾ cups all-purpose flour
– 1 teaspoon baking soda
– ½ teaspoon baking powder
– 1 ½ cups granulated sugar
– 1 cup unsalted butter, softened
– 1 egg
– 1 teaspoon vanilla extract
– 1 cup pumpkin puree

Instructions:
1. In a medium-sized bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground cloves, and salt. Set aside.
2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix well until fully combined.
3. Gradually add the dry ingredients to the wet mixture, alternating with the pumpkin puree. Mix until just combined. Do not overmix.
4. Cover the dough with plastic wrap and refrigerate for at least 1 hour, or overnight.
5. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
6. Roll out the chilled dough on a lightly floured surface to about ¼ inch thickness. Use cookie cutters to cut out desired shapes.
7. Place the cut-out cookies onto the prepared baking sheet, leaving about 1 inch of space between each cookie.
8. Bake for 10-12 minutes, or until the edges start to turn golden brown. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
9. Optional: Decorate the cooled cookies with icing or sprinkles, if desired.
