
Shortbread Cookies Recipes Lemon
Ingredients:
– 1 cup unsalted butter, softened
– 1/2 cup powdered sugar
– 2 cups all-purpose flour
– 1 tablespoon lemon zest
– 1/2 teaspoon vanilla extract
– 1/4 teaspoon salt
Instructions:
1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
3. Add the lemon zest and vanilla extract to the butter mixture. Mix well to incorporate the flavors.
4. Gradually add the flour and salt to the butter mixture. Mix until the dough comes together and forms a ball.
5. On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Use cookie cutters to cut out desired shapes.
6. Place the cut-out cookies onto the prepared baking sheet, spacing them about 1 inch apart.
7. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
8. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely.
9. Optional: Drizzle melted white chocolate or sprinkle powdered sugar on top of the cooled cookies for added decoration.
