– 1 cup all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1/2 cup granulated sugar
– 1/4 cup packed brown sugar
– 1 teaspoon vanilla extract
– 1 large egg
– 3/4 cup toasted sesame seeds
Instructions:
1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This can be done using an electric mixer or by hand.
4. Beat in the vanilla extract and the egg until well combined.
5. Gradually add the flour mixture into the butter mixture, mixing until just combined. Be careful not to overmix.
6. Place the toasted sesame seeds in a shallow dish.
7. Roll the cookie dough into small balls, approximately 1 inch in diameter.
8. Roll each ball in the toasted sesame seeds, ensuring the seeds coat the entire surface of the dough.
9. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
10. Using the bottom of a glass, gently flatten each dough ball until it is about 1/4 inch thick.
11. Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden brown.
