Recipe: Palak Chicken

Ingredients:

– 500 grams chicken, cut into pieces
– 2 cups spinach, washed and finely chopped
– 1 onion, finely chopped
– 2 tomatoes, pureed
– 2 green chilies, finely chopped
– 1 tablespoon ginger-garlic paste
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1/4 cup plain yogurt
– 2 tablespoons oil
– Salt to taste
– Fresh coriander leaves for garnishing

Cooking Instructions:

1. Heat oil in a pan over medium heat. Add chopped onions and green chilies, and sauté until the onions turn golden brown.
2. Add ginger-garlic paste and cook for another minute, until the raw smell disappears.
3. Add the chicken pieces to the pan and cook until they turn golden brown, stirring occasionally.
4. In a small bowl, whisk together the yogurt, cumin powder, coriander powder, turmeric powder, red chili powder, and garam masala. Add this mixture to the chicken and mix well.
5. Cover the pan and let the chicken cook on low heat for about 15 minutes, or until it is tender and cooked through.
6. Add the pureed tomatoes to the pan and cook for another 5 minutes, until the tomatoes are well incorporated.
7. Stir in the chopped spinach and cook for an additional 5 minutes, until the spinach is wilted.
8. Adjust the salt according to taste and garnish with fresh coriander leaves.
9. Serve the Palak Chicken hot with rice, naan, or roti.

This recipe serves approximately 4 people and can be prepared in around 40 minutes.
