Recipe: Chicken Broth

Ingredients:
– 2-3 pounds of chicken bones (such as carcass, neck, and wings)
– 1 onion, chopped
– 2 carrots, chopped
– 2 celery stalks, chopped
– 4 cloves of garlic, smashed
– 1 bay leaf
– 1 teaspoon of whole black peppercorns
– Water (enough to cover the ingredients)
– Salt to taste
Instructions:
1. In a large pot, add the chicken bones, chopped onion, carrots, celery, garlic, bay leaf, and peppercorns.
2. Pour enough water into the pot to cover the ingredients, about 8-10 cups.
3. Place the pot over medium heat and bring it to a gentle simmer. Skim off any foam or impurities that rise to the surface.
4. Reduce the heat to low and let the broth simmer uncovered for at least 2 hours. The longer it simmers, the more flavorful it will become.
5. As the broth simmers, occasionally skim off any additional foam that may appear on the surface.
6. After simmering, remove the pot from heat and let it cool for a few minutes.
7. Using a fine-mesh strainer, strain the broth into a clean container, discarding the solids.
8. Season the broth with salt to taste.
9. Let the broth cool completely before refrigerating or freezing it. You can also portion it out into smaller containers for easier use.
