Karahi Chicken Recipe

Karahi chicken is a popular and flavorful dish that originated in the Indian subcontinent. It is a spicy and aromatic curry made with succulent pieces of chicken cooked in a karahi, a traditional Indian wok-like cooking utensil. The dish gets its name from the karahi itself, which is used to cook and serve the dish. Karahi chicken is a favorite among chicken lovers and is often served with naan or rice.

Ingredients:

– 500 grams chicken (bone-in or boneless)
– 2 tablespoons oil
– 1 onion, finely chopped
– 2 tomatoes, pureed
– 2 green chilies, slit lengthwise
– 2 teaspoons ginger-garlic paste
– 1 teaspoon red chili powder
– 1 teaspoon turmeric powder
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– Salt to taste
– Fresh coriander leaves for garnish

Cooking Instructions:

1. Heat oil in a karahi (or a deep skillet) over medium heat.
2. Add the chopped onions and sauté until they turn golden brown.
3. Add the ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
4. Add the pureed tomatoes and cook until the oil separates from the mixture.
5. Add the red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well.
6. Add the chicken pieces and coat them evenly with the spice mixture. Cook for about 5 minutes until the chicken starts to brown.
7. Reduce the heat to low, cover the karahi, and let the chicken cook for about 20-25 minutes until it is tender and cooked through. Stir occasionally to prevent sticking.
8. Sprinkle garam masala on top and mix well. Cook for another 2 minutes.
9. Garnish with fresh coriander leaves.
10. Serve hot with naan or rice.
