Ingredients:
1 pound beef stew meat, cut into small cubes
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
3 carrots, peeled and chopped
2 celery stalks, sliced
1 cup frozen peas
1 cup frozen corn
4 cups beef broth
1 can diced tomatoes, undrained
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Instructions:
Press the Saute button on your Instant Pot and heat the olive oil. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set it aside.
In the same pot, add the diced onions and minced garlic. Cook until the onions are translucent and fragrant.
Add the carrots, celery, frozen peas, and frozen corn to the pot. Stir to combine.
Pour in the beef broth and diced tomatoes with their juice. Add the dried thyme, dried rosemary, salt, and pepper. Give everything a good stir.
Return the browned beef stew meat to the Instant Pot.
Place the lid on the pot and make sure the vent is set to Sealing. Press the Soup button and set the cooking time to 20 minutes on high pressure.
Once the cooking time is up, allow the Instant Pot to naturally release the pressure for 10 minutes before manually releasing any remaining pressure.
Remove the lid and give the soup a good stir. Taste and adjust the seasoning if necessary.
