Homemade Broccoli Cheddar Soup
Ingredients:
– 2 cups broccoli florets
– 1 medium-sized onion, finely chopped
– 2 cloves garlic, minced
– 3 tablespoons butter
– 3 tablespoons all-purpose flour
– 2 cups vegetable or chicken broth
– 2 cups shredded cheddar cheese
– 1 cup milk
– Salt and pepper to taste
Cooking Instructions:
1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until they turn translucent and fragrant.
2. Sprinkle the flour over the sautéed onions and garlic. Stir well to combine and cook for about 1 minute to remove the raw taste of flour.
3. Gradually pour in the vegetable or chicken broth, stirring constantly to avoid lumps. Allow the mixture to come to a simmer.
4. Add the broccoli florets to the pot and cook until they are tender but still vibrant green. This will take about 5-7 minutes.
5. Using an immersion blender or a regular blender, puree the soup until smooth. Be careful when blending hot liquids to avoid any accidents.
6. Return the soup to the pot and place it over low heat. Stir in the shredded cheddar cheese until melted and well incorporated.
7. Slowly pour in the milk while stirring continuously. Allow the soup to simmer for an additional 5 minutes to heat through.
8. Taste the soup and season with salt and pepper according to your preference.
9. Once the soup is hot and well-seasoned, it is ready to be served.
