Chicken Wild Rice Soup Recipe

Ingredients:
1 cup wild rice
1 lb boneless, skinless chicken breasts, diced
1 medium onion, diced
2 celery stalks, diced
2 carrots, diced
3 cloves garlic, minced
6 cups chicken broth
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
Fresh parsley, chopped (for garnish)
Cooking Instructions:
In a large pot, cook the wild rice according to package instructions. Once cooked, drain and set aside.
In the same pot, heat some olive oil over medium heat. Add the diced chicken and cook until browned and cooked through. Remove the chicken from the pot and set aside.
Add the onion, celery, carrots, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.
Pour in the chicken broth and add the bay leaf, dried thyme, dried rosemary, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
Return the cooked chicken to the pot, along with the cooked wild rice. Stir in the heavy cream and let the soup simmer for an additional 10 minutes.
Remove the bay leaf from the soup and discard.
Serve the Chicken Wild Rice Soup hot, garnished with fresh parsley.
