Instructions:

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, mixing well after each addition.
Once the dough comes together, divide it into two equal portions. Shape each portion into a log, about 2 inches in diameter, and wrap them tightly in plastic wrap. Chill the dough logs in the refrigerator for at least 1 hour or until firm.
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Remove the dough logs from the refrigerator and slice them into 1/4 inch-thick rounds. Place the rounds onto the prepared baking sheet, leaving some space between them.
If desired, sprinkle colored sugar or sprinkles on top of each cookie for decoration.
Bake the cookies for 10-12 minutes or until the edges turn golden brown.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
