Ingredients:

– 500 grams of fresh salmon fillets
– 2 tablespoons of olive oil
– 1 onion, finely chopped
– 2 cloves of garlic, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 1 leek, sliced
– 4 cups of fish or vegetable broth
– 1 cup of heavy cream
– Salt and pepper to taste
– Fresh dill for garnish

Cooking Instructions:

1. Start by preparing the salmon fillets. Remove any skin and bones, then cut them into bite-sized pieces. Set aside.
2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
3. Add the diced carrots, celery, and sliced leek to the pot. Stir well and cook for about 5 minutes, until the vegetables begin to soften.
4. Pour in the fish or vegetable broth and bring it to a boil. Reduce the heat to low and let it simmer for about 10 minutes, allowing the flavors to blend together.
5. Add the salmon pieces to the pot and cook for an additional 5 minutes, or until the salmon is cooked through and flakes easily with a fork.
6. Stir in the heavy cream and season with salt and pepper to taste. Cook for a few more minutes to heat the soup through.
7. Remove the pot from the heat and let it cool slightly. Serve the salmon soup hot, garnished with fresh dill.
