Soup Fish Head: An Irresistible Delicacy
Ingredients
– 1 large fish head (such as snapper or grouper)
– 2 tablespoons cooking oil
– 1 onion, diced
– 3 cloves of garlic, minced
– 1 thumb-sized ginger, sliced
– 2 tomatoes, chopped
– 1 tablespoon tomato paste
– 4 cups fish or vegetable broth
– 1 tablespoon soy sauce
– 1 tablespoon oyster sauce
– Salt and pepper to taste
– 1 stalk of spring onion, chopped (for garnish)
– Fresh coriander leaves (for garnish)
Instructions
1. Clean the fish head thoroughly under running water, removing any scales and guts. Cut the fish head into smaller pieces, if desired.
2. Heat the cooking oil in a large pot over medium heat. Add the diced onion, minced garlic, and sliced ginger. Saute until fragrant and the onion becomes translucent.
3. Add the chopped tomatoes and tomato paste to the pot. Stir well and cook for a few minutes until the tomatoes start to break down.
4. Pour in the fish or vegetable broth and bring it to a boil. Reduce the heat to low and let it simmer for about 10 minutes to allow the flavors to blend.
5. Add the fish head pieces to the pot. Make sure they are fully submerged in the broth. If needed, add more water or broth to cover the fish head.
6. Stir in the soy sauce and oyster sauce. Season with salt and pepper according to your taste preference. Cover the pot and let it simmer for another 20-30 minutes, or until the fish head is cooked through and tender.
7. Once the fish head is cooked, remove it from the pot and separate the meat from the bones. Discard any bones, but keep the fish meat aside.
8. Using a strainer or a blender, puree the soup until smooth. Return the soup to the pot and add back the fish meat.
9. Heat the soup over low heat for a few minutes to warm up the fish meat.
10. Serve the soup fish head hot, garnished with chopped spring onion and fresh coriander leaves.
