Pastina Soup Recipe

Ingredients:
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced
4 cups chicken or vegetable broth
1 cup pastina pasta
½ cup frozen peas
Salt and pepper to taste
Grated Parmesan cheese, for serving
Fresh parsley, chopped, for garnish
Instructions:
In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant and translucent.
Add the carrots and celery to the pot and cook for another 5 minutes, or until they begin to soften.
Pour in the broth and bring to a boil. Reduce the heat to low and let the soup simmer for about 10 minutes to allow the flavors to meld.
Add the pastina pasta and cook according to package instructions, usually about 8-10 minutes. Stir occasionally to prevent sticking.
When the pasta is cooked, add the frozen peas and cook for an additional 2 minutes.
Season the soup with salt and pepper to taste.
Ladle the soup into bowls and top with grated Parmesan cheese and fresh parsley.
