Chicken Oscar is a delicious and elegant dish that combines tender chicken breasts, succulent jumbo lump crab meat, asparagus, and a creamy hollandaise sauce. This recipe is perfect for a special occasion dinner or when you want to impress your guests with a gourmet meal.

Ingredients:

– 4 boneless, skinless chicken breasts
– Salt and black pepper to taste
– 2 tablespoons olive oil
– 8 asparagus spears, trimmed
– 8 ounces jumbo lump crab meat
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 1 cup milk
– 1/2 cup heavy cream
– 1/4 cup grated Parmesan cheese
– 2 tablespoons fresh lemon juice
– 2 tablespoons fresh parsley, chopped

Instructions:

1. Preheat your oven to 350°F (175°C). Season the chicken breasts with salt and pepper on both sides.

2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-8 minutes per side, until they are golden brown and cooked through. Transfer the cooked chicken to a baking dish and set aside.
