Kale and Sausage Soup
Ingredients:
– 1 tablespoon olive oil
– 1 pound Italian sausage, casings removed
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken broth
– 1 can diced tomatoes (14.5 ounces)
– 3 cups chopped kale, stems removed
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Grated Parmesan cheese, for serving (optional)
Cooking Instructions:
1. Heat the olive oil in a large pot or Dutch oven over medium heat.
2. Add the sausage to the pot and cook until browned, breaking it up into small pieces with a spoon.
3. Add the diced onion to the pot and cook until it becomes translucent, about 5 minutes.
4. Stir in the minced garlic and cook for an additional 1-2 minutes.
5. Pour in the chicken broth and diced tomatoes, including their juices. Bring the mixture to a simmer.
6. Add the chopped kale and dried thyme to the pot. Stir well to combine.
7. Season with salt and pepper to taste.
8. Cover the pot and let the soup simmer for about 20-25 minutes, or until the kale is tender and the flavors have melded together.
9. Serve the soup hot, garnished with grated Parmesan cheese if desired.
